You can also soak them as the people of the Andes do to make a refreshing drink from purple corn called chicha which is now recognized as a nutritive powerhouse due to its extreme anthocyaninin content. Anthocyaninins encourage connective tissue regeneration and are anti-inflammatory. They promote blood flow, reduce cholesterol, inhibit weight gain, and are extremely powerful antioxidants.
Anthocyaninins can even protect capillaries from oxidative damage and have been shown to stabilize connective tissue, promote collagen formation, and improve microcirculation.
